Recipe #49: CRISPY PORK BELLY ROAST

I finally got a new oven! And it’s not just any oven, it’s the Breville Smart Oven!

YAYAY! I’m so excited!

I couldn’t be any happier since I got my hands on this gorgeous gadget. God knows how long I’ve been wanting to buy a new oven as I’ve been itching to learn how to bake. Yes, I’ve baked cookies and pasta before, but I’ve never really taken serious time to explore more intricate baked goodies. This means more exciting recipes ahead, so brace yourselves! 🙂

The Breville Smart Oven is a serious must have if you love baking, but I’ll tell you more about it some time next week. For now, let me share with you this delicious pork dish, which is absolutely one of my favorites in my Asian trips.

My Crispy Pork Belly Roast recipe is actually inspired by a popular Chinese pork belly dish that is usually served in the streets and restaurants all over Asia. I’ve tried so many variations of this dish, which is sometimes served with rice or stir-fried noodles. Many times, pork belly is deep fried to a perfect crisp. But today, we will roast it in the oven.

Crispy Pork Belly Roast

The original Chinese recipe uses five-spice powder, but I replaced it with garlic powder and paprika for some Filipino touch (I personally love the aromatic flavor of five-spice, but some people may not like it).

Hey, use any kind of spice that you like! However, the trick to turning the skin into cracklings is by making sure that it’s free from moisture. Score (or prick) the skin so that the vinegar will be absorbed which will make it ‘pop.’

Unlike the deep-fried variation, this recipe does not require you to precook the meat. I must admit, I was sceptical at first as I’m used to boiling the meat prior to deep-frying to avoid undercooking the inside, especially whenever I cook lechong kawali (crispy fried pork).

Needless to say, my Breville Smart Oven cooked the meat to perfection; it came out really soft and juicy. For amateur cooks out there, we all know that keeping the moisture in while making the skin crispy is not easy to achieve in deep-frying. We sometimes overcook the meat resulting in a dry, gummy texture. I tell you, the very first time I tested the Breville Smart Oven, the meat came out tender yet the skin was deliriously crispy.

Can you imagine other yummy creations this machine can do? I am ecstatic with all the possibilities.

I’m sharing with you this recipe because it’s a great dish to be served this holiday season. It’s very easy to prepare, inexpensive, and delicious! This pork belly roast is an ahh-mazing alternative to roasted chicken or even holiday ham.

Crispy Pork Belly Roast Recipe

You will need:

  • 1 kilo whole pork belly or liempo
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tsp sugar
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup cane vinegar
  • 1 cup rock salt

To prepare:

Mix salt, pepper, sugar, garlic powder, and paprika in a small bowl. Of course, you can add your personal favorite spices. Add some chili powder for an extra kick!

Pat the pork belly dry with a paper towel. Season the meat part of the pork belly with the spice mixture. Do not season the skin and fat. Leave in the fridge overnight uncovered.

Using a knife, score the skin of the pork belly without reaching the fat layer. You can also use skewers or a fork to prick the skin.

Preheat the oven to 400F.

Wrap the pork belly with aluminum foil leaving the top portion open and place it on a grill pan or wire rack on top of a baking pan.

Brush some vinegar onto the skin. Cover the skin with a layer of rock salt pressed tightly.

Roast the pork belly for 1 hour.

Remove the salt crust and unfold the foil. Broil for 10 to 15 minutes or until the skin starts crackling and becomes crispy.

Note: If you’re using the Breville Smart Oven, set the function to ‘Grill’ at medium heat.

Let the pork belly rest for about 15 minutes before slicing.

Serve with steamed rice or as pulutuan (beer food) with your favorite condiment.

    1. Hi Clayton! Don’t be fooled by its size. Albeit small, the Breville Smart Oven is actually a countertop oven that has all the functionalities of a regular-sized oven, plus more! Roasting is a no-brainer with this tool. 🙂
